This Japanese breadcrumb coating differs significantly from conventional breadcrumbs: it is coarser and more airy and therefore provides a particularly light, crispy coating. While normal breadcrumbs quickly become compact and rather hard when cooked in the hot air fryer, Panko remains pleasantly crispy and provides a clear “crunch” when you bite into it. Panko also absorbs less oil, which not only reduces calories but also avoids a greasy mouthfeel. Ideal for anyone who values texture and taste in equal measure when it comes to plant-based wings.

 1 small cauliflower
 150 g Greek yogurt
 50 ml milk
 1 tsp paprika powder
 1 tsp garlic powder
 salt
 pepper
 50 g flour
 50 g Panko
 a little oil

Mix Greek yogurt, milk, paprika powder, curry powder, garlic powder, salt, a little pepper, and flour to make a batter.

If the batter is quite thick, gradually add a little milk until it is runny enough to spread easily, but not too runny, so that it will stick to the cauliflower.

Separate individual florets from the washed cauliflower and remove all leaves.

Now gradually add the cauliflower to the breadcrumb mixture and stir well until the florets are completely coated.

Roll the cauliflower florets individually in panko.

Place the breaded cauliflower on some baking paper in the hot air fryer so that nothing sticks. Now spray or brush with a little oil and bake for 10 minutes at 190 °C. Turn the wings once and bake for another 8-10 minutes.
