There is hardly any other type of ice cream that has as much nutty depth of flavor as walnut ice cream. Walnuts are actually not one of my favorite nuts, as they are a little too bitter for me. In this recipe, we counteract this with a good portion of caramel. After caramelizing, you will hardly notice the bitter taste at all. With the Ninja Creami**, this walnut ice cream is guaranteed to be a success.
So if you want to sneak a few walnuts into your diet, this ice cream recipe is perfect. In addition to the creamy ice cream, the caramelized walnuts also provide the perfect amount of crunch in the ice cream.
In order for the walnut ice cream to develop its full flavor intensity, it is worth choosing the base carefully. The combination of milk, cream and a hint of vanilla ensures a particularly velvety consistency. If you’re wondering why we only use a small amount of cream: With too much cream, the ice cream in the Ninja Creami** quickly becomes buttery and leaves a greasy film on the tongue.

Mix the whole milk, cream, vanilla paste and sugar well until the sugar has dissolved and freeze for 24 hours as usual.
For the caramelized walnuts, place the sugar in a pan and slowly caramelize. Then add 60 g of chopped walnuts. Stir everything together, until the caramel has combined with the walnuts.
Once the caramelized walnuts have cooled, chop them again so that there are no large lumps in the ice cream.
Process the prepared ice cream with the Ice Cream mode in the Ninja Creami. The right consistency is achieved when larger lumps form.
Then add the caramelized walnuts and stir them in using the Extras mode. Another normal pass should not be necessary.
