Mango sauce for sushi

You can easily make your own mango sauce for sushi just like in a sushi restaurant. This fruity sauce goes perfectly with sushi with baked chicken or cucumber. You can not only use it for classic sushi rolls, it also goes wonderfully with sushi bowls.

Even if you don’t actually like sushi, you should give this mango sauce another try. I don’t really like sushi with raw fish or too many nori leaves. Dipping sushi in normal soy sauce? Not with me. But I can’t get enough of sushi with a delicious sauce, chicken, cucumber or fried salmon. This mango sauce can be the perfect addition, especially if you find sushi too dry otherwise.

Still not convinced? Then try the fruity mango sauce as a dressing on your next salad.

Depending on how sour you like the sauce, you can add a little more rice vinegar. However, I would recommend that you approach this carefully.

If any of the mango sauce is left over, it will keep for a few days in the fridge, well sealed. Alternatively, you can simply freeze it and prepare a larger quantity at once.

If a sweet sauce is too boring for you, simply add a pinch of chili.

Yields4 Servings

 400 g (frozen) Mango
 1 Tbsp rice vinegar
 3 Tbsp sugar
 1 teaspoon salt
 1 teaspoon starch if necessary

Peel the mango if necessary and cut into pieces.

Heat in a pan and then puree finely with a hand blender.

Add the remaining ingredients and heat until the sugar has dissolved.

If the sauce is still too runny, mix 2 tablespoons of the sauce with the starch and add to the sauce drop by drop while stirring.
